Curry & Ginger & Chicken Stir Fry with noodles


Recipe:

  1. Spray a non-stick skillet with non-stick cooking spray (medium heat). Cook 2 skinless chicken breasts
  2. In another skillet, cook the 3 cups of spinach, 2 cups of bok choy, 5 sliced cherry tomatoes & 1 cup of sliced portobella mushrooms
  3. Open a package of Calorie FREE Miracle Noodles (Fettuccine shape). Wash & drain using a strainer. Blot dry with paper towels. Throw them into the skillet with the veggies.
  4. Add 8 oz of chicken to the skillet with the veggies. Also add 1/2 oz of cashews and a few slices of raw ginger.
  5. Season with black pepper and curry powder.
  6. Enjoy!
