Get it? Let-Us = Lettuce! Bahahaha. Ok, I'll stop now. Or will I?

My chicken Lettuce Tacos are friggin awesome because they are:

  • Fresh & crisp
  • Incisable (is that a word? ... i.e. you can incise into them)
  • Low carb
  • High protein
  • And unlike Taco Bell, these are not made with Grade F beef or Refried Bean Paste ... so you won't get a Taco Belly or the back door trots.

Version 1: chicken with guacamole

Version 2: Chicken with Cheese & Zucchini

Version 3: Tuna tacos with P28 bagels & veggies

Recipe:

(For Version 2):

  1. Boil a Chicken Breast (Note: for making chicken salad, you get the best results by boiling the chicken).
  2. Spray a non-stick skillet with PAM non-stick cooking spray and cook 3/4 cup of sliced zucchini and 1/8 cup of Daiya Dairy Free Cheese Shreds
  3. In a food processor: add 5.5 oz of chicken, the cheesy zucchini and 3 cherry tomatoes: pulse to create the chicken salad. To overpulse it... you don't want a puree.
  4. Snap the stems off of 2 cups worth of Romaine Hearts. (I buy mine pre cut & washed to save time)
  5. Add the chicken salad to the Romain Hearts. These are your tacos! Enjoy

  1. This recipe looks great! I’ve been doing IF for about 2 weeks now and really like it, but I love my salty carbs, like popcorn and chips and salsa. I did see your tortilla chip recipe, but I was wondering if you knew of any store bought ideas to curb my craving. I don’t have an expendable budget to buy all the awesome products in some of your recipes…yet…lol right now I’m a couponer 🙂 anyways, I love sweets too, but I realized that if I just eat a few fruits the craving passes. Is there any substitution like that for the salty carbs? Thanks!
